It has been so hot in Melbourne the last few days and a dip and vegetable sticks seems like the perfect afternoon snack on a hot afternoon.
I whizzed up the guacamole dip and this simple Tzatziki and served with an array of colourful organic veges and crackers.
1 cup Quick Cheese
1 small cucumber, diced
squeeze of lemon juice
2 garlic cloves – finely grated (I use organic pre crushed garlic)
pinch of Himalayan salt
Put all ingredients into a bowl. Stir to combine. Serve immediately or cover and store in fridge for up to 3 days.
Taste and season before serving.
