Day 13 – Caesar Salad

Caesar Salad

I just can’t say how much I love eating raw food… when you eat food that tastes this good and it is good for you – why eat anything else.

I’ve had a bit of a shop today and was feeling a bit peckish this afternoon – so decided rather than crackers or nuts – I’d make up a bit of salad.

Ingredients (for 2 serves):

3 cups of mesclun leaves

1/2 avocado, diced

1 1/2 tbsp. capers

Basil cheese for garnish

1 cup Caesar dressing

Caesar Dressing

Blend together 1/4 cup pine nuts, juice of 1 lemon, 1 tsp Himalayan salt, 1/3 cup extra virgin cold pressed olive oil and 1 clove of garlic until smooth.

Method:

Place all ingredients, except the Basil Cheese into bowl and toss well – serve and garnish by sprinkling with Basil Cheese.

Enjoy this healthy version of a Caesar – absolutely divine!

Now to sewing up my pants I bought – too long!
