My daughter recently had a birthday party and she wanted ‘Shawarma’ as her meal of choice to share with friends (Avengers inspired).  Works really well, the girls can pile up their plate with flat bread, a meat of choice straight off the spit, some yoghurt sauce and Greek salad…  being me it was the Greek salad that I had to have and have craved ever since… yummm… what is it with red onion, tomato, kalamata olives, cucumbers and that amazing dressing????

Here’s my version with a few spinach leaves thrown in…  absolutely comparable to the Shawarma take away version only fresher and more organic 😉

Ingredients:

Dressing – whisk together in a bowl

1/4 cup olive oil

2 Tbsp. lemon juice

1 Tsp. dried oregano

1 Tsp. sea salt

The salad

5-6 cups of spinach leaves (or any lettuce)

1 cucumber, diced

2 ripe tomatoes diced

1 cup thinly sliced red onion

1/2 cup pitted Kalamata olives

1/2 cup chopped flat leave parsley

Method:

Combine the spinach, onion, cucumber and tomato together in a large bowl. Add the dressing and toss to coat (I always use my hands it just works so much better!).

Place in the fridge to marinade for 30 mins.

Serve garnished with olives and parsley!

* If you’d like a vegan cheesy flavour, stir through 1/4 cup of ground macadamia nuts before serving

* If you’d like to add some feta (ie. you are not strictly vegan) go for it!
