Day 134 – Asian Cucumber Salad

Asian Cucumber Salad

This went well with my rice paper rolls for lunch.  Refreshing and light – this salad will go with just about anything!

Ingredients:

1/4 cup apple cider vinegar (I halved this from the original 1/2 cup)

1 Tsp. agave nectar

1/2 Tsp. sea salt

1 large cucumber, spiralled on a spiral slicer (best thing I bought for $30 from a kitchen shop)

1 roma tomato (plum in the US)

1 red capsicum seeded and diced (or red bell pepper in US)

2 Tbsp. sesame seeds (very yummy and the same in Aus as in US 😛  ) hee hee

Method:

Combine all the ingredients together in a bowl and serve.  I put it all together and placed it in a BPA free container for my lunch – delicious break to the day!
